It seems to me that a big chunk of the beauty in these maps is that they reflect real experience.
They are the result of people going about their business rather than a model of how people going about their business should look based on upon other data. I don't think that they are less beautiful just because they reflect what we might have been able to deduce from looking at population density and road networks. Brian sort of casually referred to 'existing road networks,' but Steve's pieces pull part of their beauty from his decade long obsession with building tools to let us all document road networks and releasing that data so that we can all build on that data.
