In short, unless you buy the portal toolkit or interoperability extension, it's WMS & metadata documentation (not service) standards. I asked about future support at an ArcGIS Server seminar today, WFS and WCS are supposed to be part of ArcGIS server at 9.3, due out 1st quarter next year.
