 Minnow traps are meant for minnows.  A gerbil or hamster
 can be hurt by one.  Live traps (aka 'Havahart') work for
 larger hamsters, and gerbils that aren't sneaky enough.

 I find that the corner them and throw a hand towel over them
 works.

This works too ~~~> What I do is I have a jar in my hand while I look for
her, when I find her I chase her into a corner, when they're there I slowly
put the jar in front of them.  With gerbils cute curiosity they go into the
jar (don't put the jar down too fast though, they'll just run away).
