If he does damage the sutures, he'll need to go back to the vet for sure.
In my experience, the best thing to use for closing surgical wounds on
animals prone to gnawing (and often even on those who aren't) is surgical
glue. The animal doesn't even realize anything is there and doesn't fuss
with the wound. If he damages the sutures, maybe your vet could close the
wound with surgical glue instead.

There really aren't any practical ways to make sure he leaves them alone-
you could put a part of a sock around his belly, but then he would just
chew the sock which you don't want. I don't think an e-collar would be very
effective either and might interfere with their ability to eat.
