If you're on ubuntu and you have mp4tags, then you've probably installed
the mpeg4ip-utils package (or similar - that's what it's called on
Maverick). If so, you'll have utility called mp4dump which can print
out a more-or-less readable representation of the MP4 atom tree in a file.

Thanks for the pointer. I wasn't aware of mp4dump, so I have been reading
these files the hard way using a hex editor and the ISO specs. This will
make things much easier.
