The video does not work so can't see what is your problem. On my Linux Mint it is the same easy capability to grasp the pane handle to resize panes from zero width on both left and right panes.
Without being able to see your problem as the video does not work, its likely that your theme is part of the problem. Try changing the GTK theme to allow more pane handle width to make it easier to grasp.
