Its up to you. As for your question network manager UUIDs are a lot
like "profiles", it abstracts a lot of things away. Personally I don't
like it, as it overcomplicates everything (IMO), but the UUID is just
an identifier for a connection, it has nothing to do with the MAC
address (AFAIK).

I like to use what is rock solid, its a router, you want it to be
stable and reliable. ifupdown + nftables is rock solid and is set and
forget, not to mention as its config files, far easier to "audit",
rather than network manager which is a complex connection of keywords
using the cli.

This is one of the reasons I use OpenBSD as a router, not only is there
the focus on security, but also base is very simple, and I rarely need
to worry about it.

Also its by far easier to backup and restore router configuration when
its done via a config file, your nftables config and your ifupdown
network config can be easily committed to git and backed up, meanwhile
this is not so easy with network manager.
