It seems that the problem for me came to be because I was using filters 
that were already created prior to the latest changes in functionality.  
So, even if I modified it, the results were not what I expected.  
Apparently, I would just ended up making another filter, while the original 
filter was still in place to catch everything including the chats.

Basically, I ended up deleting the filters(s) in question and recreating 
them from scratch.  I found a couple of ways to get it to filter email 
without catching chats:

1) Start with a search and, in addition to setting up the criteria as 
needed, change the Search drop-down from "All Mail" to "Inbox."  Click on 
"Create filter with this search."  You will get a message saying that this 
is not recommended because it's one of those searches that (supposedly) 
will never match incoming mail.  However, it IS what we want because the 
idea is to make sure it IS incoming mail, which it obviously WILL be.  
Click OK and go from there.

2) If you are editing a filter, just make sure you configure "Has the 
words" to say:  label:inbox  Once again, you will get a message saying that 
this is not recommended as noted in the other method.  Click OK and 
continue as usual.

So far, it seems to work...and my hope for humanity is once again 
restored.  :-)
