If it's set to something like "Unread first" then, even though you may have those categories selected at Configure Inbox, your selected inbox type will override the display of the categories tab. At least that's what happened to me when I set mine to "Unread first" just now. Setting Inbox Type back to "default" enabled the categories tabs again.
