Quick-n-dirty summary:

POP simply downloads new messages from Gmail to your computer.

IMAP synchronizes your PC and Gmail, so messages automatically appear in
similarly-named folders, and changes that happen later to one, get
reflected in the other.  If you delete (in the right way) a message on the
PC side, it will delete on Gmail's end too.
