Wow, since I posted this I have been deludged with responses with personal experiences, links, and even a great pdf on the subject!
The most useful responses have talked about the process itself, some of the pitfalls, etc. It's clear to me that converting to linux does not need to be (and probably shouldn't be) an all or nothing thing. The overall message of success so far seems to include taking it slowly and in pieces. I'm hoping we can convey this in the upcoming presentation and that they will take it to heart. I'll post a more detailed report of my findings when all is said and done.
