Many thanks to all who have replied to my questions.

I'm not an accountant, and I only use gnucash for home accounting, so I don't 
feel I need to understand/follow accounting rules and processes. Ads long as I 
understand what's happening that will do.

So I'm going to take the suggestion of @rlosey. Thanks so much.
