Possibly because it is not crashing the system as such and somehow just
putting it in a non-responsive state. Have you tried restarting the
Cinnamon desktop while it is in that state? 
Methods for Restarting Cinnamon:undefined
 * Keyboard Shortcut (Fastest): Press Alt + F2, type r, then
   press Enter.
 * Alternative Shortcut: Press Ctrl + Alt + Esc.
 * Terminal Command: Run cinnamon --replace & or killall -HUP cinnamon
   [1].
 * If frozen (TTY): Switch to a TTY (e.g., Ctrl+Alt+F2), log in, and
   run export DISPLAY=:0; cinnamon --replace & [2].
 * Troubleshoot Menu: Right-click the panel and select "Troubleshoot" >
   "Restart Cinnamon".
If that doesn't work and you can't open a terminal to use the  "sudo
reboot" or "sudo shutdown -r now"  commands  then Alt PrtScr and typing
the REISUB is likely the only safe option tto shutdown the system and
reboot.

Affter you get the sytem back up see if a tracefile exists at
/tmp/gnucash.trace. If you start gnucash from a terminal with "gnucash
--debug --extra --logto <path to file>"  where the path points to a
file location in your home directory I think that dumps as much
information as possible. The only problem is the trace file may contain
account information etc you don't want on a public site. If you can
locate whatever hung the system it will likely be the last few entries
