Ok, you should try running GNU Cash again then. Graphics on OSes like this is a little weird. I'll explain it here if you care, you don't have to and you can feel free to skip reading the rest of the email.
TL;DR you can swap out most of the operating system's graphics "stack" when you log into your user account. If you install a desktop environment using your package manager it will be presented as an option when you log in. You can always just log back out and choose the one you're using now or a different one if you don't like it. There's a minor schism between some developers that has resulted in the default environment on a lot of distros behaving very poorly. Linux (the kernel itself) only does mode switching (this is somewhat new, it used to do just about nothing) via the DRM/DRI api. Everything on Linux that doesn't run in text mode uses this. In "userspace" you have a piece of software called a "display server." This has an API that lets applications (or "clients") request surfaces or windows to draw on. There's more than one API for this, the two common ones are "X11" (which is older than Linux and has some issues) and Wayland (which is a newer replacement that has some new issues.) Xorg and Xlibre are the two most common X11 implementations. On top of the display server you have a piece of software called "the window manager." This allows you to move your windows around (and sometimes will also draw the "close button" "title bar" and other "window decorations" although that's not always the case on Wayland and a couple of extremely old X11 WMs.) The "desktop environment" is the Window manager (and now the display server it depends on which will be launched by your "login screen" or "display manager") along with a number of applications that make up your typical session (the desktop/file manager/shell, window tray if it's not part of the window manager itself, etc.) The one you're running now is either Gnome or XFCE IIRC. All of this can be swapped out from the login screen with zero configuration. You can experiment for free and always go back. Just grab one from apt. People have strong opinions on which ones they prefer. Some are more ergonomic, most are highly opinionated, some have huge bugs (*cough* Gnome.)
