In addition to the very detailed process in the other answers (and many other threads) I'd offer a simple:

View > Filter by... > Date Range for all account registers. That's a little cumbersome, but likely less so and non-destructive, so easily reversible should you have a change of heart.

But I'd ask, why?

Are those old transactions harming anything by existing?

I have 10+ years of data. It isn't in my way at all, and still there if I need or want it.
