The accounting period is set under the Edit Preferences menu item. A
balance sheet is always the state of the account balances at a specific
date. Al transactions are included as a matter of course but you can
control the accounts and the depth of subaccount information in the
report options. I presume but haven't checked that the reports will
pickup the accounting period set in the general preferences although
you may have the option to change them for some reports
