I do wonder if Planet could have tags beyond "mozilla" eventually, for
topic related streams? I know I struggle to keep up.

I think that "keeping up" should be a non-goal of planet.

That can only limit what the mozilla project can do, and that'd be bad.

Here's what I search for in planets: Who's active, and what's cooking?

And for the mozilla planet, I use it as a suggestion of which blogs to actually subscribe to myself.

When planet was created there were few enough blogs aggregated that
it was a good way to get to better know people outside of a Mozilla
context. Last time we had a debate about planet, this was the crux of
the issue, whether or not this was planet's purpose. I would suggest
that we explicitly call out the fact that the audience is now too
large (and isn't just Mozillians), and the stream of content way too
high for planet to be suitable for this purpose anymore.
While I'm not speaking for my fellow planet peers here, I disagree
with this; Planet still has a wide audience in and outside of
Mozilla-the-company and remains an important site for
Mozilla-the-community. While we have more blogs than ever, most of
them are infrequently updated and the plan to have posts explicitly
tagged as "mozilla" should keep the signal to noise ratio very high.

We simply don't have another participatory one-stop shop where all
things Mozilla-related end up in one human- and tool-accessible
stream. So, yes, Planet might not be the best possible option, but it
has a huge existing audience, and if a better option eventually comes
along I'm confident the way most people are going to find out about it
is via Planet.
