I have run Gregorio on Lion and have had no problems. I am puzzled by the Lion install wiping out your Tex installation. I use MacTex TexLive 2010 and it was untouched by my Lion installation.
2011 was recently released and I will give it a try in the next few days. I will also try a fresh gregorio compile and install to see if there are ay issues there.
