I checked another machine and it has the same problem. Odd that one does and 
the other does not.

In any case, it appears the problem was that /usr/texbin went missing from the 
default path. At least that was my problem. So others should check their path 
(echo $path) and for /usr/texbin.

That said, since you have installed a new 2011, you will need to re-install 
gregorio, including the install.py, which installs the fonts. Since the 
gregorio binary and .sty's are there, you might try just running install.py to 
get the fonts. Safer though just to recompile & install.
