If I understand you right -  as far as I know, you cannot use output of the gridascii command as input to Gstat, since this output does not contain x, y coordinates for each cell location. It is a 'plain' ascii format with a header.

Most probably you work with a recent version of Arc-Info, and you
will have access to a recent incubation of .e00. I can have a look

You could also convert your Arc-Info gridded map to ascii (gridascii command) and import to PCRaster (asc2map command). PCRaster map format is certainly supported by Gstat.
