I hope you don't get a load of this same question, but since I need both WE
and Jaws on my systems at work I am wondering if there is an easy way to
identify which Eloquence to uninstall or if I need to leave them all there?

Please be sure to read through the readme, as the interaction between the
version of Eloquence is detailed. Installing the beta will not change your
synthesizer. If you have the SAPI version of Eloquence installed, and you
want to try the new Eloquence, you should switch to the DEC32 for
Window-Eyes first, and then switch to Eloquence. If you're not using
Eloquence with any other software, then we recommend removing it to avoid
any unwanted complications.

So right now I am using the elequence with the sappy at present. So can
I download, install the new upgrade and would it change the synthosizer
by default? If so then by looking at the knowledge base I would need to
change back to dectalk32 first. Or is it safe or I should say will it be
safe to install it first.

Yes. The new ECI Eloquence synthesizer is built into Window-Eyes just
like the DECtalk Access 32 (Window-Eyes) synthesizer.
