I have version 17. I guess they are up to version 19 now.

Work with the Process menu, Alt-P. On this menu, there are pull-down menus for
selecting the source, controlling the recognition, and selecting export
options. If you are specifically working with PDF files, you can set the
source selection to be files instead of a scanner. Recognition options include
whether this is likely to be a form, a spreadsheet, in columns, or automatic
(let OmniPage decide). For output you can select several file types,
including audio files. Once you have things set up according to your
preferences, you can use ctrl-1, ctrl-2 and ctrl-3 to perform the three steps.
If you are going to read your recognition results inside Omnipage, you may need
to click inside a certain area before a cursor can appear. I usually export to
Word DOC or DOCX format.

Before you try all of this stuff, try this: Find a PDF file you want to open
using Windows Explorer. Use the Applications key (context menu key) to see
what you can do with this file. If Omnipage is installed properly, you should
see a pulldown menu of choices for conversion of the file. For this to work,
Omnipage will be started during the processing of the PDF, so it takes some
time, depending on the number of pages and their complexity.

I like Omnipage a lot. It is not quite as automatic as Kurzweil or OpenBook,
but it can produce any kind of file you would want with industrial-strength
accuracy. It is never perfect, and sometimes experimentation is needed to
determine the best settings to use.
