I've done this but in reverse. Started from Galax. Ride to the shot
tower and return. I can tell you that the ride from the shot tower to
Galax is slightly uphill (remember its a rail corrider so no hills but
a slight grade uphill). So it will be easier coming back for you.

If you have wide tires you can do it on a road bike. It's mostly
crushed gravel, a couple of bridge crossings, and some pavement. Its
also mostly in the shade covered by trees. I used a modified MTB with
narrow tires.

It was a fun ride. Bring water. There are few places were you can get
fluids but not a lot.
