You need some way to bring in the fullness at the neck, so if you don't use gathers then you need to take large darts.

I'm not entirely sure what kind of hood you're looking to make. If you want one that lays on the shoulders, you need to make it taller, so that the extra length on the sides of the head can relax onto the shoulders.
