The idea about stability is that “automatic updates” should only be for security or major bug reasons, not for new versions, else the software may change the system behavior => it would not keep stable. If you installed Thunderbird through the package manager, then you'll have to wait for the distribution developers to create a new package for the new version of the software, which should not enter into some already released distribution archive but only in the “to be released” one (=> in Lucid). But, sometime, when it's really worse doing it, the distributor may consider putting it available in a special archive, which is called "backports" in Debian/Ubuntu. Alternatively you may find it soon in someone's PPA at launchpad.
