I tried the Novell server in demo, but never went further than that. As an exchange replacement we actually started reselling the Bynari Insight Server ( http://www.bynari.net ). It's pretty polished if you are using the 3.0 connector. (I have to say to stay away from the version 2.0 connector as is has a lot of issues.)

The server combines Cyrus, Postfix, Apache, LDAP and other open source software with a well written administrative frontend along with full feature web based client. The insight connector uses MAPI to talk to the cyrus server portion of IMAP and allows you to have shared folders, a shared contact list, etc.

Might be worth while for you to look at. While I will admit, it's not a perfect replacement for exchange, It's the best alternative I have found.
