Difference between core i5 and core i7 8xx series cpu is that both are quad core but the i7 adds hyperthreading to the cores. Hence each core can execute 2 threads at once. Core i7 9xx series adds a new soxket, chipset and triple channel memory.
To be honest for a general home user the performance difference between i5 and i7 will be negligible. However if you use apps that are multi core aware then the difference is more pronounced. Apps include video editing, video conversion, 3D rendering and compiling. Games are mainly single core aware and prefer higher clock speed over anything else. That is why intel introduced turbo boost. What it does is shut off non utilized cores and dynamically increase the clock speed of the "on" cores. I7 does this more "aggressively and better" than i5 and the i7 8xx does it better than the i7 9xx series.
