You're experiencing some rather odd tendencies (such as DoD being half-way
stable and outlasting a CS server), but regardless, you don't *need* to be there
to restart it.

http://www.winsoft.net.au/~stephen/serverdoc is a small but highly functional
little utility that will restart your crashed server automatically

http://www.firedaemon.com is a small and extremely useful little utility that
will install any number of programs as an NT/2k service, complete with priority
settings, processor affinity, automagic restarting of crashed processes, etc...
Plus, it starts up when your machine starts up.  If for any reason the machine
reboots without your knowledge (can happen sometimes at a colo), the servers
aren't sitting, dead, waiting for you to manually start them up...
