I think alot of the reason it sounds terrible is the record gain of the mic
and the quality of the mic you are using. I went out and bought a
plantronics dsp-300. It cost me about $100, but everyone says I come through
clearer than anyone else. The plantronics headset comes with a mic that has
noise-canceling. This is one of the most important things. Make sure you get
a mic that has noise cancelling. My sound card is not as good as you guys
either. I have the SB Live! Platinum.
Also, if you are using a desktop mic you are likely to get alot of
background noise from everything. The last thing you want to try playing
with is the recording volume of the mic. If it is set too high, you will
sound hissy and poppy.

I have a USB headset. Now it being usb, does it use the sound card at all?
