Thanks guys. We're already running SM on the servers. Couple of nice mods in
there though I wasn't aware of the Sourcebans mod, will look into that one. 
How about some monitoring software? Is there anything that I can leave
running on my desktop or android device to keep a check on what's going on?

You won't really need to set server cvars, the default values are just fine.
For the values that influence Team Fortress 2, just type in console tf_ and
see what you can get.

Sourcemod is a must because you can have admins and enhance the gameplay
with plugins, for example a better map cycle etc.
