You are welcome!  I did not realize the difference until way into the
depoyment phase of my project =O.  The upside is that because of my
not knowing of the performance differences we ended up with a really
hot eight core server which really smokes!  Even with 8 cores
development is not workable in a production environment, prod mode is
a must for deployment.

Daniel the mode can be set with an environment variable or command
line switch when starting mongrel.  Also check the database config
file for different sections that can define differing database
connections per mode.

I *highly* recommend Capistrano (http://www.capify.org/) for
deployment. Highly.

As a general rule, I only run production mode on the server, and never
development mode. This is because development mode loads the entire
Rails stack for each and every request. Development mode will eat your
server for lunch and have your sysadmins breathing down your neck.
Depending on your host, you may also get stuck with CPU and memory
overages.

So, to summarize...

RAILS_ENV:
* development mode is for your local development box
* test mode is for testing
* production mode is for the server
