Yeah, there's basically two problems with color ink for BW. The ink color does depend on the light source, just as it does in full color, so you pretty much have to target your client on this. The other is that because you are using color inks, you can't get a completely neutral gray tone. But most black and white photo papers also have some kind of tone bias as well: slightly warm white, or high quantities of fluorescing chemicals to make the whites brilliantly cool. Likewise the blacks always have some color in them, whether the greens of Kodak's Polycontrast and Polymax, or the blues of Oriental. Then toning for permanence adds yet another opportunity for color shift, whether you choose gold or selenium as your toning chemistry.
So I don't worry about a totally neutral gray, but rather shoot for the "black and white" that looks right to me.
