Cameron, what system are you on? Because on my installation on Kubuntu 10.10, there is a help menu and it links to a locally installed version of the wiki, covering everything in a nicely structured hyperlinked format. If you don't have this information installed, it's available online at http://wiki.panotools.org/Hugin and the wiki at panotools.org has even more stuff - tutorials etc. Maybe the pointer to this documentation could be a bit more obvious, but if I google 'hugin documentation', the third hit is actually a link to the panotools wiki. Hugin is using panotools - it started out as a GUI for panotools. Please bear with hugin - this is work in progress, it's free and made by volunteers, so some things aren't to everyone's satisfaction. If you like it and want to share what you've found out, you're free to contribute and make it more like what you think is good and useful.
