Update. I had previously tried to shim, but only lightly. Shimming with 
thickish card does cut the volume, but I will try another string and see what 
happens. It just seems odd ( maybe its this bad winter weather )  that the 
string had almost doubled in volume. Thats on the D/G side, the G/C half of the 
instrument is perfect.   Thanks for the suggestions JON

There are three possible solutions:
- less cotton (which you've tried)
- less string pressure against the wheel (which you're about to try)
- a lighter string

Typically shimming with paper is a quick fix, but it's annoying in the long
term because the shim has to move with the string each time it's engaged. 
Filling in the string slot with wood and recutting the slot a little farther
from the wheel is usually a better option.
