I did a little searching on the Internet because I was curious; I had 
never heard of a Catalina with a cored hull.
     It turns out some newer Catalina models, mostly Capris but also some 
bigger boats, used Coremat to thicken the laminates. According to Jack Hornor 
and other sailboat reviewers, they technically are not cored hulls because the 
Coremat is not used to provide the necessary strength for the hulls. 
     The reviews were unclear as to why Catalina needed to thicken the 
laminates. The answer may be obvious to someone who knows more about 
boatbuilding than me.
