A lot of boats (mostly larger) have a "turning" block mounted at the aft
end of the track so the lead to the winch is always the same no mater what
the position of the jib car. If you are flying a storm jib or a 170
"drifter". On some , you will find a "double" turning block (2 sheaves) to
facilitate sail changes.

On older, larger race boats you will find 3 or more sets of tracks (per
side), all with their own cars leading to multiple turning blocks. On some
of those boats, before the development of rope clutches, you would also find
that every line, sheet, halyard and control line had it's own winch, so
don't feel too bad about having to buy just a pair   ;>)

When I get around to my deck "re-fit" I plan on utilizing the salvaged
winches I have laying around and go with an "old school" layout as mentioned
above, kind of a nod and wink at my sailing "roots"
