Do you believe that humans are on average taller than they were in the 1800's? Have you ever seen a dog breed visibly change in 10-20 years? Have you ever looked at pictures of any given horse breed from, say, 50 years ago versus today? Are you aware that MOST horses in Europe were indeed "amblers" until about the 1600-1700's? Are you aware that "amblers" all but disappeared in Europe until the mid-1900's? Characteristics change in ever mammalian species over time...sometimes very, very quickly.
