I found that Starri moves better with a touch-release of my hand at his 
chest than with a steadily increasing pressure from the carrot stick, 
too.   I don't know why this is either.  I think they have you use the 
stick in the beginning to provide some distance between you and the 
horse in case he bites, crowds, swings his head at you, etc. - for safety.

Instead of winding them in, how about using pressure at their hip so 
they stand and face you out in the circle?  Maybe combine that with 
clicker (i.e., start with clicking if they even slow down, breaking it 
down into the steps before they actually stop and face you).
