It depends.

It would depend on how naturally gaited he is, how dependant he is on the 
shoes, how he was trained (if he was forced to tolt, if he was taught to be 
held up in gait, etc.).

Before you take the shoes off, get a baseline video of his movement being 
ridden, and at liberty.

Then when the shoes are off, get a video of his movement being ridden and at 
liberty, so that you can see if and how he's changed.
