Command line is your friend. gnuplot is the best software available.
GUI Frontends for it do exist though
(http://www.mneuroth.de/privat/zaurus/gnuplot.html is an example)
which you may consider in the earlier days. Its easy to export to eps
from gnuplot which can be used in latex later for technical papers
making it popular among research scholars (and it has great features
as well).
If something more intricate is required with data than plot consider
using octave which uses gnuplot/plplot for plotting(for which qtoctave
frontend is available among others).
