I don't know how Mail keeps its messages, however, if it uses the Unix
mailbox format, as Eudora mostly does, then, with Mail closed, you can try
editing the mailbox as a text file.

I do this often in Eudora and Pine to fix scrambled messages (attachments
that come inline and have to be cut, pasted and translated externally).
Also sometimes someone's clock is off by a few years and their message
sorts incorrectly, so I rewrite the Date header. For Eudora you also have
to consider its index files, which also stores info from the headers,
(read/unread status, etc) I just delete the index file and Eudora recreates
one using the info from my new headers. I transfer the messages I intend to
rework to a separate mailbox to limit loss of info. (Or copy them if you're
experimenting.)
