Your outline is pretty much a  step by step sequence for what you want 
to do.

The only consideration is to remember the  your Summer 2000 iMac has no 
cooling fan. The new HD wants to be thermally friendly. Some of the 
faster HD's generate a lot of heat. Look for a replacement HD with 
comparable thermal characteristics to the OEM HD. (Most manufacturers 
have thermal operating temperatures on their web sites)
