I'm just curious as to why there are so many Chinese fonts with OS X. Having just scrolled through Font Book, there are twenty-five on my computer, to be specific.

And those of us who use them are damned happy that we're finally getting some variety in the fonts available to us! You'd probably feel a bit limited if American Typewriter was the only font you could use or read!
I didn't count all the Chinese fonts, but you might have lumped Japanese and Korean in your count. The Traditional Chinese family of fonts (used in Taiwan) are distinctly different from the Simplified Chinese family of fonts (used in the PRC aka Mainland China).
