I'm trying to print a banner. Office Depot no longer keeps banner paper in stock.... Next, I can't find the option to print a banner in the printer options.... I've tried with my Canon S800.... I've "surgically" removed half-fed pages.... I don't know what else to do....

Claire, with the increasing number of large-format printers available, the need for banner printing from standard printers has dropped to virtually nil. Remember back in the day, when you could print a banner from the old Unix systems, and it came out as huge ASCII art on fanfold paper? Geeks loved it, but it never was good enough for the ad industry.
Either find someone who has a large-format printer, also known as a poster printer, available, or just go to a print service shop (such as Kinko's) and get them to print it. Yeah, it will cost more money, but you can get photographic-quality out of them, as big as 4 feet wide by 100 feet long! They may have more economical options for you, depending on the print shop. You can also inquire at a nearby college or university. I pay $5 per linear foot (at 36" wide) for large-format output. You might also inquire at party-supply stores.... they may offer custom banner making at a more affordable price. Try the yellow pages?
If that just isn't in your price range, or if it's not available to you... and if the geek-level quality is good enough for you, I'm afraid you're stuck with gluing together individual sheets of paper. Double-sided cellophane tape is good for the job. That said, at least you can use legal-sized paper, end to end.
