You may be able to get around the lack of paper by using continuous feed 
paper (like for a dot matrix printer), then tear off the tractor feed 
sprokets from the side before using it in your printer. Office Depot 
should still sell that (my local one does, they were having a sale on it 
the other day).

I don't know anything about the Canon S800, but you may not be successful 
doing banners in any laser printer (don't know if the canon is one or 
not). Most of them have page sensors to make sure a page isn't jammed, 
and I'm not sure that you can override their max value (usually a bit 
larger than whatever their largest supported size page is). No matter 
what the software sends to it, a laserprinter may still jam when the page 
continues longer than its max expected length.

InkJet printers may be the way to go with this. They are usually less 
intelligent and so easier to override in software to confuse it into 
thinking it has a 36 inch long page. Of course, you may also be limited 
to ink jet printers that specifically support doing banners.

A dot matrix printer would be even better as then you can just tell it 
there are no gaps between pages, and it will continue to print treating 
the paper correctly as one long sheet.

A banner printer would be ideal :-)
