I see that 80 GB is the basic model. Why don't you just go with that, forget about partitioning it, and get a FireWire drive for all the extra stuff you were asking about (alternate boot drive, scratch disks, etc).
I'm no expert, but this makes sense to me -- what do others have to say? I run my 500 MHz iMac off a FW drive because the internal HD is so damned noisy (but not noisy enough for AppleCare to replace).
Keep us informed -- I'm dying to buy a 20" iMac myself.
