I am planning to order the 20=B2 iMac with the 160 GB hard drive (assuming

Yes.
I'm currently
using an iBook with a measly 5.6 GB disk, so I've never had a hard drive bi=

enough to worry about partitioning.
I'm not sure what leads you to believe that you MUST partition this one -- the fact that it's a large drive doesn't automatically mean it must be partitioned.
If you are doing video work or desire to have your Photoshop scratch disk on another partition, that's quite sensible. The issue of user accounts and partitions, OTOH, are entirely separate from each other and aren't related. It is up to you (as the administrator) to decide how much access other users have to your machine. You can allow them only a little, or a lot.
