as a long shot, when it boots from the DW CD hold down the x key....
this might show you the different systems that you can boot into....
with the symbol of OS 9 selected click the arrow and see if that will do it......
Whether booting in OS 9 or OS X it will take an unusual amount of time because of the older CD drive and the amount of RAM and the slower CPU....

Additionally you should be able to select OS 9 ...click the arrow beside in the disk in the startup contol panel.....on the DW disk and have your G3 boot into 9......
In any event that is what your computer is doing....
