To my experience, typing in a URL, when sent, will appear as a hyperlink. Here is an example: I am typing in http://www.apple.com as plain text. When it appears on the list, it'll be a hyperlink. At least it shows up as one in my version of mail. I'm running 10.3.4 and the mail version is 1.3.8 (v618). You don't have to put any special characters around it.
