Mike, I haven't seen much of a response to your inquiry. I run Office 2001 on a machine similar to yours and haven't experienced a lot of crashes although Word will occasionally just quit. I would suggest:
Update to OS 9.2.2 I believe it improved stability over OS 9.1 Try increasing the memory allocation for Word and PowerPoint What other application/utilities are you running when using Word? There may be a conflict. Try to find a pattern by closing applications and/or turning off utilities.
